Simple Banana Cake

What I have found over the last year, is my love for baking. I have always had an interest in baking, especially when my Grandma opened up a cake shop, but that was more of an interest in eating the cake. Although that has never changed, I have found myself bit by bit gravitating towards the mixer and scales to bake up some warm and homely cake.

For something simple but always manages to please the eater, a banana cake is probably my go-to cake to bake. And it really helps in not wasting over-ripe bananas. Which I always end up having. Am I the only one?

Banana cake reminds me of parts of my childhood. My mum would make it. My Grandma would make it. Even my Aunt would make it. It seemed to be a cake that never ran out! You would think by now, that I would be sick of it. But fear not, I have just been skimpy with the icing on top. Icing can be really sickly sometimes (sorry if you disagree). And my Grandma used to whack the icing on the banana cake as if it needed another layer of sugar.

Even if you are an absolute novice at baking, this cake is just right for you. You basically measure the ingredients, chuck it in the mixing bowl and mix it all together. It really can be that simple. Just cook it for 30-40 mins in the oven and it will be good to eat (once cooled!).

My go-to recipe for banana cake is by BBC Good Food. Have fun baking! Tag me in your photos over on my Instagram, I would love to see them!

Smoothie: Honey, Almond, Raspberry & Banana

Recently for my birthday I received a smoothie maker as a gift. I got the Nutri Shot from Lakeland. Unfortunately it seems to not be available anymore (I will link some alternatives down below).

Now I have always liked smoothies but I made very little effort to make them when I was younger. However now I see smoothies as a great alternative (for me) to a standard breakfast, particularly if I want to save time and take it with me. I have also been inspired by The Body Coach (Joe Wicks) as he has included some smoothie recipes within his videos/books. I have the original Lean in 15 book which includes the Nut and Mango Smoothie recipe. I like that he uses almond butter which seems to be a great alternative to blending whole nuts. It is quicker and can save you a couple of quid.

My ingredients:

4/5 tbsp greek style yoghurt
Handful of ice cubes
100ml milk
Handful of raspberries
Chop up 2 bananas
2 tbsp almond butter
Drizzle of honey

If you have any suggestions for key ingredients to make a variety of smoothies, please let me know in the comments below.

Polaroid

Yes, yes, and yes, it is a big craze. But I won't ever shame that. I think it is brilliant that instant film cameras are back in trend. And I have been wanting to purchase one for many years, but only recently I received one as a gift. A gift for my twenty first birthday. I of course saw this as an opportunity to capture things that I wouldn't necessarily catch on my phone camera. I wanted to capture real life. I wanted to use it to capture the very best memories.

And when I say real life, sounds like a cliche I know. Real life would be the not so perfect selfies, the behind the scenes of Instagram posts, and of course the more intimate memories, such as special date nights. I wanted it to be, the case of having one copy of each photo that is kept safe in a scrapbook. (As now a days, you don't get this so much with photography). A polaroid picture can be just that little bit of extra special. The kind of special where you look back at the picture in your late 50s and reminisce on that random late night date night that always works out to be one of the funnest times you will have.

Lets talk about life after University

I want to talk about life after University (to be specific) and the overwhelming sense of uncertainty that is presented to you after graduation day. When you realise that finding that 'dream job' is going to be more difficult than you thought. But I really don't see it as the end of the world. You have many more years to come to land the dream role, and it will take time and dedication. Although I have luckily landed myself a job, it is not necessarily the job I hope to stay in for years to come. As I hope to gain further qualifications to become a Speech and Language Therapist. Lets hope.

But also that uncertainty is not also about finding your 'dream job', it can also be about moving back home to your parents (The likely case for most graduates). I believe there is not a lot spoken about the anxiety that comes with moving back home after University. You go to University (mostly) to gain independence and experience living alone or with house mates, which often lasts for a minimum of three years. That is a long time away from home. And then to suddenly move back home...it can have its difficulties. I have certainly found it difficult to move from a city to a village, with no local amenities. I would have to walk at least half an hour to the local shop, and that is if I walk fast. Although I love my parents place, having the house hold items of a whole house and then moving back into one room was certainly hard, a struggle to say the least.

However, now that I am settled in at home, and I am close to passing my driving test, when I do, I know that it will make a huge difference. It will definitely give me greater freedom. Especially make it easier to get to and from work, and to visit my boyfriend down in Kent.

But I would also consider getting in touch and rekindling relationships with friends that stayed in your home town whilst you went to University, or friends that have also returned from University. This gives you a good opportunity to get out of the house, have fun and reminisce over old memories.

Lets look at this time in our lives and remember our most funniest and eye opening experiences gained from higher education and remind ourselves that (hopefully one day the debt will be worth it, haha), no I kid, remind ourselves that we all have to leave education at some point in our lives and face the real working world. And to feel anxious after graduating is normal, and is nothing to be ashamed of.

Perfect Colour Palette - Alice Through The Looking Glass

Gifted to me over Instagram I was unbelievably excited to try out this eye palette. With all the vibrant colours I knew it was something I could really experiment with. Something I should really do, considering I always stick to the safety of light pinks and coppery colours. Who else does the same? Although I feel I am a bit late on the Alice in Wonderland collection bandwagon by Urban Decay, I still believe this gem of a palette is an essential for that summer look, whether it be day or night. Hopefully in the near future I'll add a look using this palette.
